材料
30 克幼砂糖
80 克無鹽牛油
3  個雞蛋 (分開蛋黃及蛋白)
150 克 70% 純黑朱古力

製法
(1) 預熱焗爐至 180oC 約十五分鐘。
(2) 朱古力、牛油用熱水座溶備用。
(3) 蛋黃打至忌廉狀，加入朱古力牛油中拌勻。
(4) 蛋白打至起泡，分兩次加入幼砂糖打至挺身。
(5) 朱古力糊中加入 1/3 蛋白拌勻，再下餘下蛋白。
(6) 倒入焗盤放入焗爐焗約三十五至四十分鐘即可取出放涼，撒些糖粉即成。

備註 : 
(1) 此朱古力餅不含麵粉，出爐後中央部份會塌下，因此撒上糖粉能令蛋糕漂亮些。

Legging係同女人作對產品，對腳粗啲真係唔好着，但為追上潮流，惟有繼續 keep  fit。班衰同事成日用朱古力引小妹，雖然食黑朱古力冇咁肥，但苦到死，冇晒食朱古力應有嘅樂趣。
不過最近識咗瑞士籍嘅  Francesca，好鬼 fit嘅佢，叫我食吓佢自家製嘅 dark chocolate，一放入口只有好香嘅可可味，一啲都唔苦。  Francesca解釋，其實黑朱古力只要用頂級可可豆做，就唔會有苦味，加咗香草 rosemary，食完仲有回甘㖭。

Francesca用自己個名創立全人手製瑞士朱古力品牌，仲開朱古力班，內容好過癮，包括朱古力配酒、朱古力配香檳，連朱古力配邊種水都有，收費$200至$400。佢 11月仲會同旅發局合作喺美酒佳餚年開班。

材料
牛油200克
朱古力200克
麵粉15克
雞蛋5 隻
糖250克 

製法
1.將牛油和朱古力放入器皿中，不用攪伴，直接放進微波爐，以160度 焗3.5分鐘，使它溶化。
2.將糖慢慢放入溶化的牛油和朱古力中，期間不要攪動。
3.慢慢攪動使糖逐漸溶化。
4.將雞蛋逐隻打殼 放入及撈勻，然後放入麵粉撈勻。
5.將朱古力漿倒入蛋糕器皿中並放入焗爐，用200度火焗25分鐘。
6.將焗爐取出，將蛋糕從器皿中倒出 及切片，即可食用。

1.平價軍人飲料

黃榮俊翻查資料書，找到關於朱古力鮮為人知的史實，「話說在 1519年，西班牙柯泰斯將軍入侵拉丁美洲，阿茲特族建立的墨西哥帝國失陷，淪為西班牙殖民地。當時土著用一種稱為 Chocolatl的飲料招待大軍，『 Choco』指壓碎可可豆時發出的咯咯聲響，『 atl』則是水，把兩字結合便成為今日的『 Chocolate』。」最初的朱古力，把可可豆及玉米磨成粉末加水、加胡椒粉及香料冲泡來喝，味甘澀辛辣，「到 1847年，英國人 Joseph Storrs Fry用糖及可可油加入可可粉，製成柔滑塊狀食用朱古力，及後瑞士人 Daniel Peter發明把牛奶加入朱古力，出來的味道更佳，成為今日朱古力雛形。」

苦澀黑朱古力味夾甜香呍呢拿，就好似追求過程中患得患失的感覺，加上造型似頂高帽，送給女士實冧爆。

材料
呍呢拿醬 100克、 70%黑朱古力鈕 120克、魚膠片 5克、橙酒 10克、淡忌廉 250克、雞蛋 100克、糖 30克、可可粉 10克、蛋糕麪粉 30克、牛油 10克、紅莓 8粒、曲奇餅 2塊

做法
1. 將 20克黑朱古力鈕加牛油，放入微波爐用大火加熱 15秒至溶後拌勻。

2.將雞蛋加糖打起，篩入可可粉及蛋糕麪粉，再加（ 1），由底往上拌勻。

3.將麪糊倒入模內，放入已預熱至 160℃焗爐隔水焗 20分鐘，取出攤凉，放入冰格急凍 1晚，然後脫模置室溫解凍。

4.淡忌廉用細火煮熱，撞入 100克朱古力鈕，加入呍呢拿醬、魚膠片及橙酒拌成忌廉狀。

蛋黃 100克、呍呢拿油 1克、忌廉 100克、牛油 100克、 70%黑朱古力鈕 100克、蛋白 240克、砂糖 140克、鹽 1克、橙酒 40毫升、可可粉 60克、蛋糕麪粉 20克、發粉 2克

做法︰

1. 蛋黃打起，加黑朱古力鈕、牛油、忌廉、呍呢拿油及橙酒繼續打成朱古力忌廉。

2.蛋白逐少加砂糖及鹽打至企身，再逐少摺入朱古力忌廉中。

3. 將蛋糕麪粉、發粉及可可粉過篩，加入（ 2）拌勻，然後倒入模中。

4.放入焗爐以 150℃低火焗 30分鐘，取出後放入冰格急凍１晚，取出置室溫解凍後切成 4件即可。

材料(六人份量) 
苦甜(bittersweet) /半甜(semisweet)朱古力  170克 (切粗粒)
冇盬牛油 170克 (切粒) 
蛋 3 隻 
蛋黃 3 隻
砂糖 6 湯匙 
盬  1/8茶匙  
麵粉 6 湯匙 

裝飾 
拌碟忌廉、雪糕、生果(隨意可省)  
糖粉少許(隨意可省) 

用具 
用具6個蛋糕杯 (souffle dishes or custard cups) 

做法:
1.  預熱焗爐350F (177C) 。在蛋糕杯周圍及低部塗上牛油。
2. 放已切碎的苦甜朱古力和牛油在煲中，慢火備用煮溶，離火，待涼至暖。用另一個盛盆，把蛋、蛋黃、糖及盬，用電動打蛋器以中速打至奶黃色。
3.  最後把朱古力糊攪入(fold in)蛋糊，慢慢加入麵粉(巳篩好)。

2 cups flour
125 grams chocolate (squares)
3 eggs
1 cup softened butter
1 cup sugar
2 tbsp cocoa powder
¼ cup milk

Preheat oven to 180 degrees C. Grease two cake tins of 7 inch diameter.
Melt the chocolate in a bowl set over a deep pan of boiling water.
Cream together butter and sugar and add the eggs one at a time, beating well.
